Brazil Nut Berry Apple Crisp
Here is a Zen Food recipe your kids will love!!! It features the Brazil Nut with it’s excellent source of fat and protein and high content of the mineral selenium. Selenium is a mood elevator and helps keep anxiety at bay. In our house we coined the term “zen food” to mean foods that promote feelings of relaxation and an overall sense of wellbeing.
Because this recipe can use any combination of fruit and nuts, it can be made all throughout the year, in all seasons! Better yet—it is flourless and packed with protein. The protein comes from the use of almond and brazil nut meal and quinoa flakes. One of our favorite versions of this crisp comes from making it with plums, green and purple pears, raspberries and/or peaches from our garden in late summer.
Ingredients
4 cups fruit (raspberries, dried cranberries, pears, apples, plums, peaches, blueberries)
¼ cup walnuts (optional)
2 Tablespoons high-grade maple syrup
¾ cup almond and brazil nut meal (grind ½ cup almonds and ¼ cup brazil nuts in powerful blender until powdery)
¾ cup quinoa flakes
A pinch of sea salt
½ teaspoon of ground cinnamon
¼ cup salted butter (optional)
2 Tablespoons of extra virgin olive oil or grapeseed oil
Preheat the oven to 400º F
Lightly grease a ceramic shallow baking dish with a small amount of oil. Chop or slice the fruit and line the bottom of the pan with the fruit slices or berries. If you want more nuts, add the walnuts to the fruit. Prepare the almond/brazil nut meal in the blender. In a separate bowl, mix together the nut meal, quinoa flakes, sea salt, cinnamon, maple syrup, and oil until just combined. Crumble the mixture over the fruit in the baking dish. Dot with butter, (optional if you are dairy free). Bake until the topping is browned and the fruit is bubbling, 20-25 minutes.
